El Chubby’s Mexican Restaurant has been in our home at 1191 S. Abilene St in Aurora, CO, since 1991! Your patronage over the years has made this possible. Our following has grown exponentially, thanks to our loyal patrons who have followed us from day one. We are a family-owned business serving fresh, quick cuisine. We make beans in the pot just like Mama used to make, and our green chili is made fresh every day! We are best known for our Hot Green Chili, but our Carne Asada Fries is now our new Signature dish.
We serve up authentic Mexican food for breakfast, lunch, and dinner. “What is your favorite?” is an all-too-common question asked by a newly arrived customer who has yet to experience the decadence of our Mexican cuisine. “Anything with Carne Asada” is the response. “What is that?” the customer asks. Answer: “thin strips of steak grilled to perfection with jalapeños, onions, and tomatoes.” Delicioso!
