- There are a range of different forms of the word. We call it chorizo; in the Basque region of Europe it’s txorizo; for Catalan folk nearby it’s xoriço; and the Portuguese use chouriço. Incidentally, in Cajun and Creole cooking, a variety known as chaurice is popular.
- The word itself is likely to originate from the Latin term ‘salsīcia’ meaning salted.
