Aurora locals love El Chubby’s breakfast burritos for a few simple reasons. You get to pick from ten fillings, you decide how much green chili goes inside or on top, everything is made to order, and our doors open at 7am Monday through Saturday (9am on Sunday). Add a drive-thru for the mornings when you can’t sit down, and a breakfast burrito from our kitchen fits just about any start to the day.
We have been cooking at the same address on S Abilene St since January 1991. That is 35 years of early mornings, and a good share of them have started with a breakfast burrito handed across the counter or out the drive-thru window. People come back for the food, of course. They also come back because the burrito ends up the way they asked for it. That part is no accident. Everything here is made to order, and almost anything on the menu can be put together the way you like it.
What fillings can you get in an El Chubby’s breakfast burrito?
The breakfast section of our menu lists ten breakfast burritos, and between them they cover most of what people crave first thing in the morning:
- Egg with bean
- Beef
- Potato
- Chorizo
- Bacon
- Diced ham
- Potato and bacon
- Potato and chorizo
- Sausage
- Steak
If you like to keep it simple, egg with bean or potato is a classic way to go. If you need something that will carry you all the way to lunch, look at the doubled-up options. Potato and bacon or potato and chorizo give you two fillings in one burrito, and they eat like a full plate. Chorizo brings its own spice and color, so it pairs nicely with a milder chili if you’re still waking up. Bacon, sausage and diced ham are the familiar breakfast meats. The beef and steak burritos are there for people who want something heartier and more savory before work.
There is no wrong answer. Plenty of people settle on a usual and order it the same way every time. Plenty of others like to work their way down the list and try something new each week. Either way, it gets made fresh when you order it.
How can you have your breakfast burrito served?
Picking the filling is half the decision. The other half is how much green chili and cheese you want, and that’s where our five styles come in. The same five choices apply across our full burrito lineup, so once you learn them, you can order anything on the menu like a regular.
Plain means just the burrito, with no chili and no cheese. It’s the tidiest choice and the easiest to eat on the go.
Chili puts green chili inside the burrito, rolled right in with your filling. Special goes a step further, with green chili and cheese inside. Both still travel well, and both give you that green chili flavor in every bite without needing a plate.
Smothered is where things get serious. The burrito is covered with green chili and cheese, and you will want a fork. Deluxe is the full treatment: smothered, then topped with lettuce and tomatoes.
If you’re eating in, Smothered and Deluxe are hard to beat, especially on a cold Colorado morning. If you’re heading straight to work, Plain, Chili or Special are easier to handle in the car. That’s a practical way to choose, and it works.
Hot green, mild green or red: which chili goes best with breakfast?
Our green chili is made fresh every day, and it’s the thing El Chubby’s is best known for. Whenever chili is part of your order, you have three choices: hot green, mild green and red.
Hot green is our signature, the one people know us for. It brings real heat, so if you haven’t had it before, you might ask for it on the side the first time and add it as you go. Mild green is the gentler choice, and it’s a good match if you’re pairing it with a spicier filling like chorizo or just easing into the day. Red is the third option for anyone who prefers it.
A smothered potato and bacon burrito under hot green is a very different breakfast from a Plain steak burrito, and both are on the table any morning we’re open. If you want the longer story on our chili, we wrote about why our green chili stands above the rest.
When can you get a breakfast burrito at El Chubby’s?
Our doors open at 7am Monday through Saturday and at 9am on Sunday, and we stay open until 9pm every day. We serve breakfast, lunch and dinner, and you can dine in, take your order to go, or use the drive-thru.
On busy mornings the drive-thru is the easy answer. Pull up, order your burrito the way you like it, and get on with your day, whether that means the office, school drop-off or a job site across town. The burrito gets made to order either way.
If you’d rather sit down, come hungry. The breakfast menu goes well beyond burritos, with Huevos Rancheros, Huevos con Chorizo, Steak Rancheros, Ham Steak and Eggs, a Breakfast Taco and Flo’s Gringo Breakfast. A table full of people can each order something different, and everyone gets theirs made fresh.
If you’re comparing spots around town, we put together a longer guide to the best breakfast burritos in Aurora with more ideas for building your perfect morning order.
What keeps Aurora coming back for breakfast?
The reasons are pretty simple. The burrito is made the way you ordered it. The green chili was made that day. The hours work for people who start early. And it’s the same family-owned restaurant at the same address it has been since 1991, which counts for something.
We’re always glad to see familiar faces in the morning, and new ones too. If you’ve never tried a smothered breakfast burrito with hot green chili, this is your sign to come find out what the fuss is about.
Stop by our restaurant at 1191 S Abilene St, swing through the drive-thru, or order online for pickup or delivery through DoorDash, or find us on Uber Eats. Online ordering starts at 8am Monday through Saturday and 11am on Sunday, so for the earliest burritos of the day, the drive-thru is your best bet.
