Huevos Rancheros, Steak Rancheros and Huevos con Chorizo: Our Smothered Breakfast Plates

Huevos rancheros are eggs served over tortillas and covered with a chile sauce, and at El Chubby’s that sauce can be our green chili, made fresh every day. Our breakfast menu has three plates built on that idea: Huevos Rancheros, Steak Rancheros and Huevos con Chorizo. If you’re searching for huevos rancheros near you in Aurora, we serve breakfast starting at 7am Monday through Saturday and 9am on Sunday at 1191 S Abilene St, and every plate is made to order the way you like it.

Below is a plain guide to each of the three plates, how they differ, and how to pick your chili so breakfast comes out exactly how you want it.

What are huevos rancheros?

The name means “ranch-style eggs,” and the story most often told is that the dish started as a hearty mid-morning meal on farms and ranches in rural Mexico. It needed to be filling, quick to make, and built from things a ranch kitchen would always have on hand: eggs, tortillas, beans and a good sauce. That simple formula traveled north, and today huevos rancheros are a breakfast standard across the Southwest and here in Colorado.

Versions vary from kitchen to kitchen. In Mexico you’ll often see a red or tomato-based salsa. Here in Colorado, green chili is a natural fit, and with three chili choices at El Chubby’s you can take the dish in whichever direction you like. The core of it stays the same everywhere: eggs on tortillas, with a sauce generous enough that you need a fork and maybe a tortilla to get every last bit.

If you’re curious about how Mexican meal times compare to the breakfast, lunch and dinner routine most of us grew up with, we wrote about that in how meal times work in Mexico. Huevos rancheros fit right into that tradition of a big, satisfying morning plate.

Huevos Rancheros, Steak Rancheros or Huevos con Chorizo: which should you order?

All three live in the breakfast section of our menu, and each one suits a different kind of morning.

Huevos Rancheros is the classic, the straight-ahead version of the dish described above. If you’re new to the dish or you just want the straightforward version, start here. It’s also the plate where you’ll taste the chili the most, so it’s a good way to figure out whether hot green, mild green or red is your favorite.

Steak Rancheros, as the name says, brings steak to the rancheros plate. It’s the pick for the hungriest person at the table, the one who wants breakfast to carry them well past lunch. The steak and eggs combination is a breakfast favorite for good reason, and the chili ties the whole thing together.

Huevos con Chorizo means eggs with chorizo, the seasoned sausage that shows up all over Mexican breakfast tables. Chorizo generally brings its own spice and a lot of flavor, and when it’s cooked with eggs they tend to take on a reddish color and a rich, savory taste. People who like a little heat in the morning tend to love this plate. If you’ve had our chorizo in a breakfast burrito, this is the same flavor in plate form.

Not feeling Mexican-style eggs today, or ordering for someone who isn’t? The breakfast menu also has Flo’s Gringo Breakfast, a Breakfast Taco, and Ham Steak and Eggs. That makes it easy to bring a group where not everyone wants the same thing.

How do you choose your chili for a smothered breakfast plate?

We offer three chili choices: hot green, mild green and red. The hot green is the one we’re best known for, and it has real heat. Mild green gives you the same green chili flavor with a gentler kick. Red has a deeper, earthier taste that some people prefer on eggs.

A good rule of thumb: if the plate already has some spice, like Huevos con Chorizo, mild green or red keeps things balanced. If the plate is simpler, like the classic Huevos Rancheros, it’s a great place to try the hot green and taste what our green chili is all about. And if you can’t decide, ask for chili on the side. Everything here is made to order, and almost anything can be prepared the way you like.

Not sure which plate fits? Ask us when you order. We’re happy to tell you what comes on each one and how to change it, whether that means swapping the chili, holding something, or adding a side.

Beans are a good companion to any of these plates. Ours are made in the pot, and they soak up the chili beautifully. You can also add a side of rice, guacamole, salsa or sour cream from the sides menu if you want to round things out.

Can you get these breakfast flavors to go?

Yes. We have takeout and a drive-thru, so breakfast on the way to work is an easy stop. A smothered plate is easiest to enjoy at a table, so if you’re eating in the car or at your desk, a breakfast burrito might be the better move.

Our breakfast burritos come with egg and your choice of filling: bean, beef, potato, chorizo, bacon, diced ham, potato and bacon, potato and chorizo, sausage or steak. That means you can get the same flavors as Huevos con Chorizo or Steak Rancheros wrapped up and ready to travel. You can still have them smothered if you’re sitting down, or keep the chili on the side for the road. We’ve written a whole guide to the best breakfast burritos in Aurora if you want to dig into the options.

When can you get breakfast at El Chubby’s?
