The most common chilis in Mexican cooking

With over 50,000 chilis and many having different names, it’s no wonder cooking Mexican dishes can get complicated. Here’s a quick guide to some of the more commonly used chilis:

Anchos

Anchos are usually dark brown and are commonly used in Mexican restaurant dishes.

Poblanos

Polanos are another favorite chili used in Mexican dishes. They are deep green and measure four to six inches long.

Jalapenos and other chilis

Jalapenos are perhaps the best-known variety of chili. They are bright red or green and measure three inches long. They have a somewhat grassy taste. Some other popular chilis used in Mexican cooking include chipotle, serranos, gaujillos, cabaneros, habaneros, arbols, pasillas and pasillas oaxaqueños.
